A Seafood Charlie Recipe

Ingredients
1 cup uncooked white rice
1/4 cup all-purpose flour
2 tsp ground coriander
1 tsp ground cumin
1/2 tsp salt
1/4 tsp ground cayenne pepper
1 Tbs vegetable oil
4 redfish or tilapia fillets (about 1¼ pounds)
1/2 medium red onion, thinly sliced (about ½ cup)
1 can (14.5 ounces) diced tomatoes
1 1/2 cups frozen mango chunks, unthawed
1 1/2 cups Thai red curry sauce
Chopped fresh basil, sliced green onions and lime wedges (optional)

Directions
1. Prepare rice as label directs.
2. Meanwhile, in small bowl, combine flour, coriander, cumin, salt and cayenne pepper. Evenly coat both sides of fish with flour mixture.
3. In large skillet, heat oil over medium-high heat. Add fish and cook 5 to 6 minutes or until golden brown, turning once; transfer fish to plate. Drain fat from skillet.
4. To same skillet, add onion and cook over medium-high heat 2 to 3 minutes or until lightly browned, stirring occasionally. Add tomatoes with their juice, mango and curry sauce, and heat to boiling; reduce heat to medium-low. Place fish over curry mixture and cover tightly with lid or aluminum foil; cook 4 to 5 minutes or until internal temperature of fish reaches 145°. Serve fish and curry mixture over rice along with basil, green onions and lime wedges, if desired.

Ingredients
1/2 cup sour cream
2 tablespoons favorite seafood seasoning or rub.
1 1/4 pounds tilapia fillets
2 teaspoons vegetable oil
8 soft taco flour tortillas
1 medium avocado, chopped
1 cup cherry tomatoes, quartered.

Recipe
1. Heat grill pan over medium heat. In small bowl, stir sour cream and 1 1/2 teaspoons seafood seasoning.
2. Coat tilapia with oil; sprinkle with remaining 1 1/2 tablespoons seafood seasoning. Place tilapia in pan; cook 6 minutes or until internal temperature reaches 145 degrees, turning once halfway through cooking. Transfer tilapia to plate; loosely cover with aluminum foil and let stand 5 minutes.
3. Cut tilapia into 1-inch pieces. Fill tortillas with tilapia, avocado and tomatoes; evenly top with Seasoned Sour Cream.

Ingredients:

1 tablespoon fresh lime juice
1 tablespoon honey
1/8 teaspoon ground cayenne pepper
1/2 (1 1/2-pound) pineapple, finely chopped (about 2 cups)
1/2 jalepeno pepper, seeded if desired, and finely chopped (about 1 tablespoon)
1/2 small red onion, finely chopped (about 1/2 cup)
1/4 cup chopped fresh cilantro leaves.
1/2 teaspoon ground coriander.
1/2 teaspoon paprika.
1/2 teaspoon kosher salt.
1/2 teaspoon fresh ground black pepper.
1 1/2 pounds tilapia
Nonstick cooking spray.

Recipe
1. Line outdoor grill rack with aluminium foil; prepare grill for direct grilling over medium-high heat. In medium bowl, stir lime juice, honey and cayenne pepper until combined; add pineapple, jalapeno, onion and cilantro and toss until well combined. Makes about 2 1/2 cups.
2. In small bowl, combine coriander, paprika, salt and pepper. Evenly sprinkle fish with coriander mixture; spray fish with nonstick cooking spray. Place fish on prepared grill rack; cover and cook 8 to 10 minutes or until fish flakes easily with fork, turns opaque throughout and internal temperature reaches 145 degrees. Serve fish with salsa.

Ingredients
2 large egg whites
1 garlic clove, finely chopped
3 cups cornflakes, crushed into coarse crumbs
1 Tbs chopped fresh parsley leaves
1 tsp dried basil
1 tsp no salt added lemon pepper seasoning
1 tsp lemon zest
4 tilapia fillets (about 2 pounds)
1 small lemon, cut in half
1/2 medium avocado
1/4 cup light sour cream
2 Tbs fat-free milk
1 Tbs chopped red onion
Nonstick cooking spray

Directions
1. Prepare Fish: Preheat oven to 350°. Spray rimmed baking pan with nonstick cooking spray. In wide, shallow dish, whisk egg whites until frothy. In separate wide, shallow dish, combine garlic, cornflake crumbs, parsley, basil, lemon pepper and lemon zest.
2. Dip each tilapia fillet in egg whites, then in cornflake crumb mixture, patting lightly so mixture adheres to both sides. Place tilapia on prepared baking pan.
3. Bake tilapia 15 to 20 minutes or until tilapia turns opaque throughout and reaches an internal temperature of 145°.
4. Meanwhile, prepare Avocado Sauce: In food processor with knife blade attached, blend all ingredients until mixture is well combined, scraping bowl occasionally with rubber spatula.
5. Squeeze juice from lemon over tilapia and serve with Avocado Sauce.
