Oven Roasted Croaker Fish

A Seafood Charlie Recipe
Prep Time: 5 mins.
Cook Time: 35 mins.
Ingredients:
2 Cut croaker fish (scaled)
3 Carrots, peeled and sliced
1 onion, thickly cut
2 teaspoons vegetable oil
1/4 tsp. salt
2 stock cubes
1/2 tsp. paprika
1/4 tsp. ground pepper
1 tsp. All-Purpose Seasoning
6 Parsley leaves
Instructions:
1. Add the salt, pepper, paprika, stock cubes and all-purpose seasoning in a bowl.
2. Use the back of a spoon to dissolve the stock cubes then mix all together.
3. Add oil then stir very well.
4. Add the onions, parsley leaves and carrots then mix properly.
5. Add the fish into the mixture then toss properly.
6. Use brush to rub the sauce properly in and out of the fish.
7. Pour the fish in an oven pan that is loosely lined with foil then top up with some chopped parsley leaves.
8. Wrap the foil then place in a pre-heated oven of 200°C.
9. Roast for 35 mins or until the fish is properly done internally.
10. Bring the fish out of the oven once roasted then unwrap the foil.
Serve the roasted croaker fish warm.

Sweet and Sour Yellow Croaker
Ingredients
- yellow croaker fish
- 2 stalks celery
- 2 tbsp ketchup
- 1 tbsp brown sugar
- 3 tbsp vinegar
- 2 tomatoes
- Half onion
- Half bell pepper
- Cooking oil
- 1 little water
- Red chilli
Cooking Instructions
- Wash the fish oroperly remove inwatds and scale.Then.make some slices on the fish.Pat dry then fry.Set aside when done.
- In a small bowl combine sugar vinegar and ketchup and a little wate r mix well.
- In the same pan where you fried the fish.Add just a little oil sautee inion until soft then the tomatoes.Cook it for two mins then pour the mixture of vinegar ketchup and sugar.Next is the red chilli.Mix it well.Place the fish in a plate and pour the sauce sprinkle chopped celery on top.
