A Seafood Charlie Recipe
Ingredients
1 English cucumber, halved crosswise
1/2 small white onion, thinly sliced into rings
1 Tbs red wine vinegar
5 tsp extra virgin olive oil
1/2 tsp kosher salt
1/4 tsp ground black pepper
4 boneless salmon fillets (about 1½ pounds)
1/4 cup fresh lemon juice
1 tsp lemon pepper seasoning
1/2 tsp garlic powder
1/2 tsp onion salt
1/4 cup light sour cream
1/2 tsp chopped fresh dill plus sprigs for garnish
Lemon slices for garnish
Directions
1. Into small bowl, with vegetable peeler, cut thin slices from each cucumber half up to seed portion. Stir in onion, vinegar, 1 teaspoon oil, salt and black pepper. Refrigerate until ready to serve.
2. Place oven rack 4 to 5 inches from broiler. Preheat broiler to high. Coat both sides of salmon with remaining 4 teaspoons oil. In shallow baking dish, place salmon, skin side up, and broil 3 to 5 minutes or until skin is lightly browned.
3. With wide spatula, turn salmon. Pour lemon juice over salmon and sprinkle with lemon pepper seasoning, garlic powder and onion salt. Broil salmon 5 minutes.
4. In small bowl, mix sour cream and dill; spread evenly over salmon. Broil 3 to 4 minutes or until sour cream topping is lightly browned, salmon is almost opaque throughout and internal temperature reaches 145°. Slip spatula between salmon skin and flesh to remove skin. Serve salmon over cucumber mixture; garnish with dill sprigs and lemon slices.

3 Tbs firmly packed brown sugar
1 Tbs Lawry’s® Seasoned Salt
2 lbs center-cut salmon fillets (skin-on)
1/3 cup Stubb’s® Original Bar-B-Q Sauce
Directions
1.Mix sugar and seasoned salt. Coat salmon evenly with seasoning mixture.
2. Grill salmon, skin side down, over medium heat 15 to 20 minutes or until fish flakes easily with a fork, brushing with Bar-B-Q sauce during the last few minutes of grilling.

1 lb salmon fillet
2 tsp Knorr® Taste of Japan Meat & Vegetable Seasoning
Directions
1. Preheat oven to 400°. Rub Knorr® Taste of Japan Meat & Vegetable Seasoning on salmon. For best results, season with salt. Place on rimmed baking sheet.
2. Roast 15 minutes or until salmon flakes with a fork.

Ingredients
1/2 Tbs kosher salt
1/4 Tbs lemon pepper
4 6-oz. salmon fillets
4 Tbs olive oil, divided
4 garlic cloves, minced
2 Tbs chopped fresh dill
1/3 cup fresh lemon juice
Directions
1. Preheat oven to 400°F. Lightly coat a shallow baking dish with nonstick cooking spray. Place fish, skin side down, in baking dish. Sprinkle with salt and lemon pepper; drizzle with 2 tablespoons of the oil; set aside.
2. Heat remaining 2 tablespoons oil in a medium skillet over medium-high heat. Add garlic; sauté 5 minutes or until tender. Remove from heat and stir in lemon juice. Pour over salmon.
3. Bake 15 to 20 minutes or until fish flakes easily with a fork.
4. Serve with couscous, rice or pasta!

Ingredients
6 sprigs fresh dill
1 small lemon, thinly sliced plus additional slices for garnish
2 cups water
1 Tbs water
1 cup dry white wine
2 1/4 tsp salt
1 1/4 lbs fresh salmon fillet
1/2 cup light mayonnaise
1/3 cup chopped assorted fresh herbs such as chives, dill, tarragon or thyme leaves plus additional for garnish
1/4 cup light sour cream
2 Tbs fresh lemon juice
1 tsp lemon zest
1/4 tsp ground black pepper
Directions
1. In large skillet, add dill sprigs, lemon slices, 2 cups water, wine and 2 teaspoons salt; cover and heat to boiling over high heat. Add salmon, skin side down, to skillet. Cover and cook 7 to 9 minutes or until salmon turns almost opaque throughout and reaches an internal temperature of 145°. Remove salmon from skillet and pat dry with paper towels; remove skin, if desired.
2. Meanwhile, in small bowl, stir mayonnaise, herbs, sour cream, lemon juice and zest, pepper and remaining 1 tablespoon water and ¼ teaspoon salt. Serve salmon with sauce garnished with lemon slices and herbs, if desired.

Ingredients
1 cup dry red wine (such as Pinot Noir)
3/4 cup pomegranate seeds
1 shallot chopped
2 tablespoons honey
2 tablespoons unsalted butter
4 boneless salmon fillets (about 1 1/4 pounds)
Recipe
1. Preheat oven to 400 degrees. In blender, blend wine and 1/2 cup pomegranate seeds; strain through fine-mesh strainer into small bowl and discard pulp.
2. In small saucepan, heat shallot, honey and pomegranate-wine mixture to a boil over high heat; reduce heat to medium and simmer 8 minutes or until reduced by 1/2. Remove from heat; stir in butter. Makes about 1/2 cup.
3. Place salmon, skin side down, in 8-inch square baking dish; sprinkle with salt and pepper. Pour wine mixture over salmon. Roast salmon 15 minutes or until internal temperature reached 145 degrees. Serve salmon drizzled with pomegranate seeds. Garnish with thyme springs, if desired.

1 (8-ounce) head broccoli, cut into 2-inch pieces
6 oz shiitake mushrooms, stems removed
2 medium carrots, cut into 1-inch pieces
1 small red onion, cut into ½-inch wedges
2 cups sugar snap peas
1 Tbs olive oil
3/4 tsp salt
1/2 tsp ground black pepper
1 garlic clove, minced
2 Tbs hoisin sauce
2 tsp chili garlic sauce
1 1/4 lbs fresh salmon fillet
Directions
1. Preheat oven to 425°. Line rimmed baking pan with parchment paper.
2. In large bowl, toss broccoli, mushrooms, carrots, onion, snap peas, oil, ½ teaspoon salt and ¼ teaspoon pepper; spread in single layer on prepared pan. Roast vegetables 15 minutes.
3. In small bowl, stir garlic, hoisin, chili garlic sauce, and remaining ¼ teaspoon salt and ¼ teaspoon pepper. Move vegetables to 1 side of pan; place salmon, skin side down, on opposite side of pan. Evenly spread hoisin mixture over salmon.
4. Roast salmon and vegetables 10 minutes longer or until internal temperature of salmon reaches 145° and vegetables are crisp-tender.

Ingredients
1 jar ShopRite Trading Company Teriyaki Sauce
4 (4- to 6-oz.) salmon fillets
1 Tbs sesame seeds, toasted
Directions
1. Pour teriyaki sauce into a baking dish. Add fillets, turning to coat. Cover and refrigerate 30 minutes, turning fillets occasionally.
2. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove fillets from marinade; discard marinade. Grill fillets 4 to 5 minutes per side or until fish flakes easily with a fork and the center is still translucent. Transfer fillets to a platter. Sprinkle with sesame seeds, and serve.
